Mo’ Jerk Mo’ Spice
We tested, and tested and re-tested this blend, mainly because we love Jerk chicken. What this provides is a base for the traditional wet jerk marinade, it can always benefit from pureed cilantro, lime juice and fresh green onions. It is spicy, but not overpowering as it provides a broad spectrum of flavour.
- Important to note, the marinade needs an acidic citrus juice, soy sauce and neutral cooking oil such as Canola. The bag only provides the spices needed to complete the marinade.
- We use pineapple juice at the restaurant, as it provides real tenderizing capabilities when left for 12 hours.
- Can be used as a dry rub for very unique flavours, but not for searing.
